Love, love, love!

I actually discovered Melissa and her blog, Satisfying Eats, earlier this year. I had been gluten-free for a number of years and was trying to go completely grain-free and low carb. I had discovered the almond flour recipes (good, but heavy and wet) and the coconut flour recipes (lighter, but eggy and dry), and was experimenting with combining the two. There was Melissa's blog. She was doing exactly that, and she was creating the kind of food I *liked* and she was way ahead of me.

Several months later, our birthdays and playdates have been graced with her vanilla butter cake and chocolate cupcakes. Her chocolaty frosties have saved more days that I can count, and everyone in my family LOVES her blueberry syrup on pancakes and southern style "corn"bread. My husband, especially, was stunned by the "corn" bread, and the blueberry syrup... well, just the best thing ever. Some other favorites are her no-grain granola (really, you have to try that one), sandwich buns, dinner drop biscuits, and pumpkin creme brulee.

So I was really excited when she said she was coming out with a cookbook. I wondered how much new stuff would be there. After all, we've all seen that, right? A new cookbook that is really just a compilation of the old stuff. I shouldn't have doubted her. As I looked through the table of contents, the word that kept popping into my mind was "prolific." Prolific. How on earth does she have time to do all this???

Anyway, I immediately set about trying out some new things. It will surprise no one who knows me that the first thing I made was chocolate. I made the refrigerator fudge. It actually didn't set up quite right, but I think that's my fault. The flavor was fabulous; my 2 year old keeps asking for it! Then I made the cinnamon raisin bread, corn puppies, and her Daddy's cornflake clusters. I won't tell you how many of those I have eaten already. I think that recipe alone warrants the purchase price. Then I noticed that my sampling was heavy on desserts, so I made her cabbage "noodles," and sweet baked "beans" for dinner. Wonderful, all of it. I can't wait to try the pound cake and "sugar" cookies next week.

One of the things I like about Melissa's style, aside from the fact that she seems to like the same food I do, is her warm, conversational tone. When I'm reading her recipes, it's sort of like "just do this, and if you want it more like that, then do that." After all, we're just hanging out in the kitchen, making good food, and having a great time, right? That's how it feels.

She likes to use Kal brand stevia. Recipe after recipe calls for Kal stevia. I felt like she was nagging me, so finally, I got some. I am so glad I did. She's right; it's different from the other stuff, and so much better. Anyway, most of her recipes call for a certain amount of stevia, but it always specifies to adjust for taste. I like that. It's not rocket science; it just needs to taste good.

Really, I don't think I've ever not liked one of her recipes. I am a tweaker, though, and I often make adjustments to any recipe I'm trying just because I have different ingredients on hand or I think it will work better, or I'm being lazy. My most-often tweaks for Melissa's recipes are to use additional sweeteners for chocolate items (I like to combine stevia with liquid splenda and/or sugar alchols for a synergistic effect) and to double whatever recipe I'm making. I'll often double the recipe the first time I make it now. I know that if it is Melissa's recipe, the end result will be delicious. I haven't been disappointed yet.

Best Cookbook Ever for both tastebuds & health!!

Excellent & delicious recipes--MUCH more delicious than cooking with wheat & grains. You'll enjoy the food SO much and you'll feel so much better than you've Ever felt in your life that you will never ever eat any other way again.

This cookbook is very well organized & has wonderful, thoughtful, valid, & vital sections on the how & why for using these wonderful recipes, shopping for food, stocking your pantry, organizing your cooking-day/week in order to easily create these recipes for all your meals, and good cookware to use although you don't need much more than is already in the average kitchen.

The kindle edition needs some editing & tweeking. 1) Many recipes do not have carb counts included--the author states in the beginning that this is included in all recipes (for instance No-Grain Granola/Cereal and Ricotta Waffles/Pancakes do not include carb count). 2) The Table of Contents is listed as "Contents" at the beginning of the book, so it does not show up in the settings as a link and you'll either have to search for the Table of Contents or go to the beginning of the book & flip through pages until you get to the Table of Contents, which is 5 page turns, I know because I've had to do it so many times. 3) The section on "Crock Pot Recipes" in the Table of Contents does not have links from the recipes in that list to the page in the book as do all the other recipes in the Table of Contents. They simply list the page number, which is not relevant in an eBook, so you have to do a search for those recipes. 4) The links to her excellent blog are listed as [...](sic--yes, it is misspelled in the book) which takes you to a page that says that address does not exist because it is not the correct address. The correct address is [...] 5) Most of the recipes that include using other recipes in the book have a link in the original recipe that takes you to the other recipe (like French Toast will also give you a link to the necessary Cinnamon Bread recipe), but some do not: they will state that the other recipe you will also need to use is on a certain page number, which again is not relevant in an eBook, so you have to do a search for the second recipe (Easy Crunchy Chips/Crackers states you can serve it with Amazing Salsa on page 35 and does not give a link to the salsa recipe page).

In spite of the eBook faults, it is still an excellent cookbook. I have bought the kindle version for myself. When the hard-copy is in print I will buy one for myself and two for gifts. Highly recommended for everyone who eats food!!

UPDATE, 01-16-201
The ebook version of the cookbook has been updated almost entirely in order to include most of the links that were missing when I first reviewed it (above). There are still missing links (but not nearly as many as before). For example, the Pecan Pie Ice-Cream recipe refers to another recipe this way: "Candied" Nuts (pg )--no page number & no link provided, and there are a few more such instances. Also, in the Table of Contents the "Crock Pot Recipes" and "Appendix" headings still do not link to those sections; otherwise the Table of Contents is all linked and very well done. Grammar and spelling, for the most part, is much, much better than in the blog, so the narrative in the cookbook is very easy to understand on the first read-through, you don't have to read it again to make sure you understood correctly.

Having said all that, the recipes themselves are virtually flawless in execution, very easy to duplicate, and reliable results can be depended on every time. PLUS, THEY ARE ABSOLUTELY DELICIOUS! I never cared much for bread anyway, so I had no problem letting go of it when I went GFSF, but I LOVE All of Melissa's bread recipes and happily include them in my meal plans. Her pizza and waffles are SO much better than those dishes Ever were when made with wheat flour by anybody or any restaurant. She has REALLY spoiled me for eating out: only the very best restaurants and steakhouses can measure up to the recipes in this cookbook and on her blog! Again: this cookbook is highly recommended for everyone who eats food!

Love this cookbook!!

I stumbled across Melissa's story in the fall of 2012 and I am so glad I did! It was after reading about her reason for going grain, gluten and sugar free (and low carb) that I decided to try it and see if it would help me with my stomach issues and boy did it help ~ I am like a new person! I haven't felt this good in a very long time! I started reading her blog and EVERY recipe I could find of hers so when this book came out I was SO excited, I purchased it right away. All her recipes are easy, healthy and DELICIOUS! I have yet to try one our family doesn't like. From breakfast ideas to desserts they are all fantastic! Her condiments are fabulous as well... easy to follow with healthy ingredients. From homemade mayo, chicken stock, tomato sauce, to breadless bread crumbs (I love to bread my chicken, fish, vegetables like eggplant, zucchini, etc. the possibilities are endless and this recipe is good on ALL of them!) I would HIGHLY recommend this book! I am very excited to get her next book as soon as it comes out too! I would like to thank Melissa for all her hard work in the kitchen and creating all these delicious and healthy recipes ~ they have changed my life for the better!!
